The Paşaeli vineyard is located in the Çal District of Denizli, nestled in Türkiye’s Aegean region. Perched at 900 meters above sea level, it features head-trained bush vines with an average age of 25 years, contributing to a characterful and concentrated fruit profile.
The soil is primarily limestone-rich and calcareous, interspersed with sand and silt. This composition ensures excellent drainage and provides moderate to low fertility—conditions ideal for producing intensely flavoured, high-quality grapes.
The vineyard experiences a continental climate, marked by hot, dry summers and cold winters. August temperatures average around 32°C, but the vineyard’s elevation introduces pronounced day-night temperature shifts. This diurnal range helps the grapes retain vibrant acidity. Low humidity also plays a crucial role, reducing the risk of disease and promoting vine health and fruit purity.
Grapes were hand-harvested on the 3rd and 9th of September 2022. In the winery, they were partially destemmed and crushed, with a portion of whole clusters included to add dimension. Fermentation was carried out using only native yeasts, with two weeks of skin contact via gentle punch-downs and pump-overs in stainless steel tanks. The wine was then partially aged for eight months in 500L and 300L oak barrels, adding layers of texture and complexity.
Light ruby in colour, the wine opens with delicate aromas of wild strawberries, raspberries, and plums. The palate is fresh yet persistent, framed by silky tannins and finishing with an elegant balance of fruit expression and acidity.
